Simple Menu Monday: 9/6

Ok, so due to the holiday weekend, which was very relaxing, Simple Menu Monday is a day late, but here it is.

My week didn’t go exactly as planned last week so three dinners carried over to this week. One night we decided to use a Groupon for Flatire Burgers, another night I made Tuna & Peas w/ Macaroni & Cheese (as a super quick meal) and another night we had a left over buffet.

Monday - Homemade Chicken Pot Pie (carry over)

Tuesday - Breakfast for Dinner (carry over)
(Sausage – purchased last week at Homeland using $1/1 Jimmy Dean facebook coupon, Hashbrowns, Eggs, Toast )

Wednesday - BBQ Beef Sandwiches/Corn on the Cob & Homemade Baked Beans
(Brisket in the crockpot – picked up at Homeland using a $2/1 Red River Ranch coupon, using BBQ from stockpile, corn on the cob from freezer, making homemade baked beans this morning. Will post recipe)

Thursday - Shake n Bake Pork w/ Broccoli & Fresh Fruit

(Hubby’s request. Picked up small package of boneless pork chops at Homeland using $1/1 Hormel coupon SS 8/1 or printable. Already had a small package in the freezer. Birdseye Broccoli – picked up at Crest for $0.77 ea., also purchased shake n bake at Crest for $1.68 – $0.55/1 coupon from September All You, strawberries from freezer w/ bananas – $0.37/lb at Aldi)

Friday - Zesty Chicken Tortilla Bake (carry over)

Saturday - Roasted Turkey Breast, Mashed Potatoes, Tossed Salad
(Turkey breast from freezer – purchased at Target on sale a month or so ago, bought 15lb of potatoes at Crest for $3.50, using lettuce, tomatoes, cucumber & carrots from crisper drawer along with orange bell peppers from our pepper plant)

Sunday - Mexican Bubble PizzaNEW Recipe (Thanks Dedra!)
(96/4 ground beef from Aldi $2.99/lb, Old El Paso seasoning – catalina deal at Homeland using $1/3 coupon from Better at Home coupon book, cheddar cheese, salsa & garnishes from fridge, from Crest tomato soup – 2/$1, sour cream and Pillsbury Grands – using $1/2 from Better at Home coupon book , omitting olives and green onion.)
